Twee Tea // Cajun Cod with Orange & Tomato Salsa



As we mentioned in our Day in the Life post a few days ago, one of our favourite dishes is this delectable Cajun Cod with a Orange & Tomato Salsa. So easy to make and seriously tasty, all you'll need is...

White Cod
Cajun Spice Mix
Tomatoes
Orange
Spring Onion
Corn on the Cob
Corriander
Lime


Firstly, heat the grill (medium/hot), score the cod and squeeze the juice of 1/2 a lime over the top and then sprinkle with a few teaspoons of cajun spice mix (adapt to taste!)

Next, stick it all under the grill along with a ready cooked corn on the cob for around 10-12 mins (until the fish is cooked)

While that's cooking prepare your salad...



Chop up the spring onions, tomatoes and corriander and peel the orange and cut the segments into chunks. When the corn is ready, slice off the kernels with a sharp knife over the salad. Give it a mix et voila!

Dinner is served.

Alternatively, we sometimes make this with a mango & cucumber salsa with a little chili for an extra kick! Scrumptious!
