Twee Treats // Apricot Scones

Morning Sweets,

Another beautiful day here in the Far Away Land of Twee. Up bright and early this morning we decided it would be a lovely day for an afternoon tea picnic here at Twee Towers, and what is Afternoon Tea without freshly baked scones we ask you?




As much as we love the classic plain and raisin fruit scones when scouring the kitchen for complimentary ingredients our eyes fell upon some perfectly sweet and golden dried apricots - perfect for this sunny day we're having today, so we decided to make...

Apricot Scones

You will need-
4oz Self Raising Flour
1oz Butter
Pinch of Salt
1/2oz Casting Sugar
25ml milk
1 egg (beaten)
Handful of chopped, dried apricots

Step 1 - Preheat the oven to 220 degrees. Line a baking tray with baking parchment and grease.

Step 2 - Add the flour, salt and butter, and rub the butter into the flour

Step 3 - Add the sugar, milk and apricots, stir until the dough starts to form

Step 4 - Flour your surface and tip the dough out, knead lightly until it takes shape. Flatten out to about 2cm thick and cut (we used a small heart shaped cutter) your scones out.



Step 5 - Brush the top of the scones with the beaten egg. Put in the oven for 10-15 minutes (ours took just 10 as they're so mini... et Voila!





We love the idea of serving up the scones in cupcake wrappers - especially for a picnic! We cut our scones in two and added a dollop of Strawberry & Rose jam & another of our Kiwi jam from the other week to the middle and sandwiched back together, with a healthy spoonful (or 2) of fresh cream on the side. Entirely too good (especially when still warm from the oven, trust us, too good to resist!) - Enjoy :)
