We mentioned a little while a go that we picked up an interesting new ingredient to bring some new flavour to our Twee Treats - excited to finally be giving our Elderfower Extract a whirl. One of our favourite things to do in the Twee Kitchen is to add a new twist on a classic, and what could be more classic than a Lemon Drizzle cake? All the fresh citrus flavour of the typical Lemon Drizzle cake with added delicate floral tastes, in little fairycake portions. Beautiful!

Elderflower & Lemon Drizzle Cakes
Elderflower & Lemon Drizzle Cakes
Ingredients:
4oz Self-rasing Flour
4oz Caster Sugar
4oz Butter
2 eggs
Zest of 1/2 lemon
Couple of drops of Elderflower Extract

For drizzle:
60g Granulated Sugar
Juice of 1 lemon
A drop more elderflower extract.
(makes 10 fairy cakes!)

Step 1 - Preheat oven to 180 degrees & line a muffin tin with cake cases. Cream butter and sugar. Beat the eggs together seperately and then gradually add to the sugar/butter mix, then add the elderflower flavouring.
Step 2 - Sift in flour gradually - don't beat too hard as you'll knock all the air out. Once combined add the lemon zest.
Step 3 - Bake for 25-30 minutes (do the clean knife test to ensure baked through).
Step 4 - mix together the lemon juice, sugar and extract. Poke holes in the top of the cakes with a fork then pour the drizzle over (about a table spoon each).
Step 5 - Leave to cool then serve :) (with Twee staple Rose or Lavender Tea, of course!)
